Đây là lý do thử nghiệm shelf life cuối cùng vẫn cần dùng đúng bao bì dự kiến thương mại hóa.

Chọn cấu trúc theo shelf life

For instant coffee, packaging is almost part of the preservation technology itself. The powder has large surface area and is very sensitive to moisture; at the same time, oxygen-related reactions can change smell and quality over time. So calling a material a “good barrier” needs to be tied to a specific mechanism rather than treated as a general property.

Which agents does the barrier need to resist

OTR and WVTR are two parameters commonly used to describe a material's oxygen and water-vapor resistance. However, values measured under standard conditions aren't always equal to the actual ingress rate of a complete package. Seals, lids, joints, and the geometry of the finished package can all change real-world performance compared with a single flat film sample.

Packaging also has to suit the powder's mechanical properties. A material with good barrier but prone to puncture or unstable sealing won't achieve the preservation goal. So checking seal integrity, seal strength, and transport tolerance needs to sit alongside the barrier test.

When building shelf life, packaging data should be combined with product data. Looking only at a film's WVTR without knowing the powder's moisture threshold makes it hard to determine whether the material is sufficient.

Barrier design should start from the product's change threshold and work backward to material requirements. This approach helps avoid two extremes: choosing packaging too weak, which reduces shelf life, or choosing a structure beyond what's needed, which increases cost and hinders recycling.

OTR, WVTR, and the limits of a material number

In the barrier problem, material testing is only one layer of evidence. Seals, lids, joints, and transport conditions need to be treated as elements in series along the same protective barrier. When choosing a laminate structure, you need to balance barrier, sealability, mechanical properties, and cost.

A good barrier system needs to be confirmed at the level of the complete package. A laminate film can achieve good OTR and WVTR in material testing, but actual results change once seals, folds, or puncture points are present. For jar-type packaging, effectiveness also depends on the lid and gasket; for flexible bags, the seal and fold points are the weak spots to watch.

When selecting a material, the supplier's published specifications need checking against data on the actual structure. Climate conditions, sealing method, and bag geometry can make performance differ from a single material sheet. This is why final shelf-life testing needs to use the actual packaging, not just the raw material.

Where real packaging differs from the test film

OTR and WVTR are usually used to describe a material's oxygen and water-vapor resistance. However, these are material parameters under a specific test condition, not a commitment about the product's shelf life. Temperature, humidity, thickness, laminate structure, and test method can all change the result compared with real conditions.

The seal is a clear example of the gap between material and real packaging. A laminate film with high barrier but an unstable seal still creates an entry pathway for moisture or gas. For flexible bags, folds and small punctures also deserve attention. So checking seal integrity and structure needs to accompany the barrier test.

Packaging also has to withstand the packing process itself. Powder can create dust, get caught in the seal area, or change the quality of the joint. In that case, the problem doesn't lie in the barrier material but in the whole system's operating ability. Good design must account for the packing machine and process conditions.

Choosing a structure based on shelf life

Light is another variable easily overlooked when focus stays on oxygen and water vapor. For a product sensitive to photochemical reactions, transparent packaging can create risk even with very good gas barrier. So material choice must start from the product's main decline mechanism rather than a single barrier number.

Finally, shelf life must be confirmed using the complete package. A single-film sample can give beautiful results, but the commercial product is affected by seals, lids, headspace, transport conditions, and distribution climate. Final testing should therefore reflect real conditions as closely as possible.

At the confirmation stage, you can place packaging structures side by side under the same temperature and humidity conditions, then track product moisture over time. This approach lets you see not just which packaging performs better but also how quickly the difference appears. If one structure shows deviation early, that's a signal worth investigating further before committing to full-scale production.
